Depending on where you are, it may already start feeling like Autumn. Kids have headed back to school and pumpkin spiced products have re-emerged from their summer hibernation regardless of what the weather is like outside. Even if you are in a place that still feels like summer, we can get in the mood of the season with some fall inspired breakfast meal preps. If you haven't started meal prepping for your busy days, I highly recommend it! Nothing is worse than the distraction of hunger and while we all will blow our diets here and there, it is really defeating to have to blow your diet out of necessity rather than enjoyment. These fall inspired breakfast meal preps though will have you both satisfied and healthy so you can save the indulgence for times it is really desired.
Pumpkin Yogurt Parfait
A fun take on yogurt parfaits to get you in the mood for fall!
Makes 4
Ingredients:
2 cups of Plain Greek Yogurt
4 Tablespoons of Canned Pumpkin
Pumpkin Spice to taste
Sweetener of choice to taste
2 Tsp of Vanilla Extract
4 Tablespoons of chopped walnuts or pecans
Directions:
Combine yogurt, sweetener and vanilla in a bowl, taste to make sure it is the sweetness you want.
Combine pumpkin, spice, sweetener in a separate bowl. Finally combine cereal and nuts in a third bowl. Put out your 4 mason jars and layer yogurt, pumpkin and nuts and store in the fridge.
Savory Pumpkin Bread
A surprising savory option of the traditionally sweet pumpkin bread.
Makes 8 Servings
Ingredients:
1 cup Canned Pumpkin
½ cup oil of choice
2.5 cups of Flour
2 Eggs
½ cup of sugar
2 tsp Baking Powder
¼ tsp salt
1 tsp black pepper
2 tsp rosemary
1 tsp of nutmeg
Preheat the oven to 350 degrees F. Beat eggs and sugar until pale, add oil and pumpkin. In a separate bowl, combine flour, spices, salt and baking powder. Combine dry and wet ingredients and pour into a prepared loaf pan, bake for 45-55 minutes or until a toothpick inserted in the center comes out clean.
Pumpkin Breakfast Bars
A great quick breakfast you can enjoy without the processing of store bought brands!
Makes 4
Ingredients:
1.75 cups of Canned Pumpkin
2/3 cups of Sugar
1 cup Oats
1 cup Ground Oats
1 Tb Pumpkin Spice
1 Tsp Baking Soda
¼ Tsp Salt
1/3 cup of Pecans
Directions:
This recipe requires a slow cooker. Cut a circle of parchment paper for the bottom of your slow cooker and spray with cooking spray. In a bowl, combine the pumpkin and sugar well. Next add the rest of the ingredients save for the pecans, until a thick dough forms. Spoon the batter on the bottom of the slow cooker and spread evenly. Sprinkle with the pecans. Cook for one hour on medium and then let sit for an hour before removing. Cut into bars and you're done!
